Quick & Simple Cup cake recipe

INGREDIENTS-
All purpose Flour – 1.5 cup
Sugar – 3/4 cup
Refined Oil – 1/3 cup
Orange Juice – 1 cup
Baking Powder – 1/2 t.s
Baking Soda – 1 t.s
Orange Zest – 1 t.s
Salt – a pinch
Orange Food Colour – 3 drops(optional)
Milk – 2 t.s

PROCEDURE-

Preheat oven to 350 degrees centigrade.
Mix and sift together all purpose flour, baking powder and baking soda.

In a bowl add orange juice, sugar and oil, and mix well. Now add the orange zest and mix.

Slowly add the flour mixture (made in step 2) in the juice mixture (made in step 3), keep mixing gently.

Make a smooth mixture of dripping consistency – add milk only if needed (I did not need it).

Line the muffin tray with paper liners.

Fill the mixture in the paper liners till 3/4 depth of the cups.

Bake in a preheated oven at 350 degree F for 25-30 minutes or until a toothpick, when pricked in the cupcake, comes out clean.

When done, remove from the oven after 5 minutes.

Let it cool, then decorate with icing or simply enjoy plain!

Tips :
1. I did not add orange zest but added a teaspoon of vanilla essence.
The cake did not have the orange flavor and tasted more like vanilla.
Adding orange zest will most likely give orange flavor.

2. Used freshly squeezed orange juice.

3. Did not have to add milk and did not add food color either.

4. Omitted salt in one batch and it worked ok 🙂

  2. Bhavini me too keep looking for cakes that do not need butter, eggs or condense milk….
    Try making vegan cakes they turn out awesome!!!!

    Here is a chocolate cake that I always make
    1 1/2 cup flour
    1/3 cup cocoa powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup sugar
    1/2 cup vegetable oil
    1 cup cold water (or ice coffee, orange juice whatever works for you)
    2 teaspoon vanilla extract
    2 teaspoon vinegar

    Just mix dry ingredients in a bowl. Use a very light hand because when we don’t use eggs gluten is released and that makes the cake very chewy……
    In another bowl add all liquids except vinegar.
    Add wet ingredients to dry ingredients and mix well.
    when you are just about ready to transfer the cake batter to the baking pan add vinegar and pour the batter in the pan.
    Bake for 30-35 mins at 350 degree F for 35-40 minutes

  3. Great recipe Bhavini di.I like the combination of chocolate with orange. I’ll add chocolate chips to these cupcakes.
